Drain pasta; keep warm. Step 2: Heat olive oil in a deep 12-inch skillet on medium heat. Cook pancetta, 4-6 min. or until rendered, golden brown and crispy. Transfer pancetta to plate with paper towels to drain. Wipe out same skillet, add both sauces and stir to combine 3-4 min. on medium heat. Step 3: Whisk egg yolks, ½ cup Parmesan cheese and ½ tsp. pepper until combined in medium bowl. Slowly add 1 cup of warmed sauce mixture while whisking continuously. Pour egg mixture back into skillet while stirring constantly until heated through. Add spaghetti and reserved pasta water to skillet with sauce; toss to coat.
