Step 2: Trim stem end from eggplant. Cut eggplant lengthwise into 1/4-inch-thick slices to yield at least 16 slices (it’s good to have a few extra). Arrange slices into a microwave-safe pie plate or casserole dish, overlapping to fit into dish evenly. Cover tightly with plastic wrap; pierce once to vent.
