Enjoy on its own or over your favorite pasta. 6 Servings 15 minutesPrep Time 25 minutesCook Time 0 peopleloved this print Ingredients Directions Ingredients 2 medium eggplants,, sliced ¼-inch thick 2 large zucchinis,, sliced ¼-inch thick 1 large red onion, sliced ¼-inch thick olive oil spray 1 jar (24 ounces) Bertolli® Traditional Marinara with Italian Herbs & Fresh Garlic Sauce, , divided 3 cups shredded Italian-blend cheese 6 tablespoons grated Parmigiano-Reggiano cheese,, divided 1-1/2 cups Italian-style panko breadcrumbs 2 tablespoons olive oil Directions Step 1: Preheat grill to medium-high. Spray cut sides of vegetables lightly with olive oil spray before placing on the grill. Grill 2 to 3 minutes on each side or until crisp-tender with grill marks. Cool slightly. Step 2: Preheat oven to 400°F. Spoon ¾ cup sauce in bottom of 13x9-inch baking dish. Layer ⅓ each of the eggplant, zucchini and onions, ¾ cup sauce, 1 cup shredded cheese and 1 tablespoon Parmesan. Repeat layers twice. Combine breadcrumbs, oil and remaining Parmesan; sprinkle over mixture in dish. Top with spoonfuls of remaining sauce.
