Squeaking artichokes

When looking for the best artichokes, you’ll want to find the ones that “squeak” when you squeeze them. Intact leaves are a sign of freshness, and a little browning is okay. If you aren’t cooking with them right away, seal in a plastic bag and store in the refrigerator for up to a week. As soon as the leaves begin to spread, it’s time to cook them up!
