White Bean & Sausage Soup Nothing beats a steaming bowl of soup, and this one will keep you coming back for more. Savory sausage, cannellini beans, hearty vegetables, and herbs and spices blend together to make the perfect comfort food for cozy nights. 15 minutesPrep Time 30 minutesCook Time print Ingredients Directions Ingredients 1 pound ground sausage 1 egg 1/2 cup breadcrumbs 1/3 cup parsley leaves, chopped 1 tablespoon Parmesan, grates 1 teaspoon kosher salt 1/2 teaspoon black pepper 1 tablespoon Bertolli® Extra Virgin Olive Oil Rich Taste 1 small yellow onion,, chopped 2 carrots, peeled and chopped 2 garlic cloves, minced 1 bunch Tuscan kale, stems removed, leaves coarsely chopped 4 cups Bertolli® Rustic Cut™ Marinara with Traditional Vegetables Sauce 1 15-ounce can (cannellini) beans, drained 1/2 teaspoon kosher salt 1/2 teaspoon red chili flakes 2 tablespoons parsley leaves, chopped 1/4 cup shaved Parmesan cheese Directions Step 1: Preheat oven to 400°F. Line a baking sheet with parchment paper. Step 2: In a large bowl, add ground sausage, egg, breadcrumbs, parsley, Parmesan, salt and pepper. Mix well. Scoop tablespoons of mixture and roll into balls. Place on tray. Bake for 10-12 min. Remove from oven. Set aside. Step 3: In a large stock pot, heat the oil over medium heat. Add onions and carrots, and sauté for 5-7 min. Add the garlic and kale. Sauté for 1 min. until kale wilts. Add the Bertolli sauce and stock. Add half of the cannellini beans. With a fork, mash the other half, then add. Sprinkle with salt, pepper and chili flakes. Stir until all combined. Step 4: Bring soup to a boil. Then turn down heat and simmer until the soup has thickened, about 5-7 min., stirring occasionally. Place meatballs in soup and let simmer for 1 min. Sprinkle with parsley. Step 5: Ladle into bowls, and top with cheese. Serve.
