Savory sausage, cannellini beans, hearty vegetables, and herbs and spices blend together to make the perfect comfort food for cozy nights. 15 minutesPrep Time 30 minutesCook Time 0 peopleloved this print Ingredients Directions Ingredients 1 pound ground sausage 1 egg 1/2 cup breadcrumbs 1/3 cup parsley leaves, chopped 1 tablespoon Parmesan, grates 1 teaspoon kosher salt 1/2 teaspoon black pepper 1 tablespoon Bertolli® Extra Virgin Olive Oil Rich Taste 1 small yellow onion,, chopped 2 carrots, peeled and chopped 2 garlic cloves, minced 1 bunch Tuscan kale, stems removed, leaves coarsely chopped 4 cups Bertolli® Rustic Cut™ Marinara with Traditional Vegetables Sauce 1 15-ounce can (cannellini) beans, drained 1/2 teaspoon kosher salt 1/2 teaspoon red chili flakes 2 tablespoons parsley leaves, chopped 1/4 cup shaved Parmesan cheese Directions Step 1: Preheat oven to 400°F. Line a baking sheet with parchment paper. Step 2: In a large bowl, add ground sausage, egg, breadcrumbs, parsley, Parmesan, salt and pepper. Mix well. Scoop tablespoons of mixture and roll into balls. Place on tray. Bake for 10-12 min. Remove from oven. Set aside. Step 3: In a large stock pot, heat the oil over medium heat. Add onions and carrots, and sauté for 5-7 min. Add the garlic and kale. Sauté for 1 min. until kale wilts. Add the Bertolli sauce and stock. Add half of the cannellini beans. With a fork, mash the other half, then add. Sprinkle with salt, pepper and chili flakes. Stir until all combined. Step 4: Bring soup to a boil. Then turn down heat and simmer until the soup has thickened, about 5-7 min., stirring occasionally. Place meatballs in soup and let simmer for 1 min. Sprinkle with parsley. Step 5: Ladle into bowls, and top with cheese. Serve.
