Vegan Shepherd’s Pie It has never been easier to enjoy a plant-based dinner with this vegan shepherd's pie with Bertolli® Pasta Sauce. Throw in a variety of fresh veggies sautéed with plant-based meat and top with a cauliflower mash broiled to golden brown. This veggie shepherd's pie is the perfect recipe for your meatless Mondays. Tip: This recipe uses riced cauliflower which can be found in both the fresh produce and frozen sections of the grocery store. 6 Servings 15 minutesPrep Time 20 minutesCook Time 0 peopleloved this print Ingredients Directions Ingredients Cauliflower Topping 6 cups riced cauliflower (about 1 pound) 1/2 cup vegan cream cheese 1/2 teaspoon each kosher salt & ground black pepper Filling 1 pound refrigerated plant-based ground protein 1 onion,, chopped 4 cups assorted vegetables such as bell peppers, cremini mushrooms, eggplant, summer squash or zucchini,, cut into bite-size pieces 1 jar (24 ounces) Bertolli® Organic Marinara Sauce 1 tablespoon finely chopped fresh parsley, chives or basil Directions Step 1: Adjust oven rack to upper third of oven; heat broiler. Combine cauliflower and 3 tablespoons water in large microwaveable bowl; cover. Microwave on HIGH 6-7 min. or until soft. Add cream cheese, salt & pepper; mash with potato masher until smooth. Step 2: Meanwhile cook protein and onions in large oven-proof skillet on medium-high heat 5-7 min. or until onions are soft, breaking up large crumbles with wooden spoon. Add remaining vegetables; cook and stir 5-7 min. until tender-crisp. Stir in sauce; simmer on medium heat 3-4 min. or until heated through. Step 3: Spoon cauliflower mixture over vegetables in skillet, smoothing top. Place pan under broiler 3-5 min. or until top begins to brown. Serve sprinkled with herbs.
