Drain, reserving 1/2 cup pasta cooking water. Step 2: Meanwhile, heat oil in large skillet on medium heat. Cook onions and chiles 2-3 min. or until slightly softened, stirring occasionally. Add sauce; simmer until heated through. Step 3: Stir in pasta and reserved pasta water as needed until evenly coated. Stir in 2 tablespoons herbs. Remove from heat. Top with burrata; gently split each ball with the tip of a knife. Drizzle with additional olive oil and sprinkle with remaining herbs before serving. Tips: Burrata is a ball of fresh mozzarella cheese filled with pieces of mozzarella soaked in heavy cream. It is widely available in the deli section of a grocery store. Calabrian chiles are Italian-grown and often sold in jars packed in oil. They add a depth of flavor, smokiness and medium level of heat.
