In a large skillet heat oil over medium-high heat. Add pot roast to skillet and brown well on all sides; drain off fat. Step 2: In a 5- to 6-qt. slow cooker combine fennel, carrots, and onion. Top with pot roast. Pour sauce over all. Step 3: Cover and cook on LOW 8-10 hours or on HIGH 4-5 hours. Remove meat and vegetables. Slice beef, if desired. Skim any fat from sauce. Step 4: Serve meat, vegetables and sauce over hot cooked pasta. Garnish with parsley and fennel fronds.
