Cut meat into 4 pieces. Use paring knife to make a small pocket in center of each piece; insert 1 garlic clove into each pocket. Add pork to bowl with herbs; toss gently to coat all sides with seasoned oil mixture. Step 2: Heat remaining oil in 6 qt. electric pressure cooker on Sauté setting until shimmering. Working in batches, cook pork 8-10 min. or until browned on all sides. Add sauce to pressure cooker; gently scrape any browned bits from bottom with wooden spoon. Close and lock lid. Cook 90 min. on High pressure; manually release any remaining pressure. Step 3: Transfer meat to clean bowl and shred with two forks; discard any bones. Skim excess fat from sauce. Return pulled pork to sauce mixture; stir. Step 4: Variations: Use your slow cooker: Heat oil in large skillet on medium-high heat until shimmering. Season and brown pork as directed.
