Pappardelle with Chicken As seen in Bon Appetit’s May 2015 Travel Issue. Fresh rosemary, crushed red pepper and Tomato & Basil sauce blend together to perfectly season juicy chicken thighs. Once removed from heat, the succulent meat shreds with ease before being served over pappardelle. Enjoy! 4 Servings 15 minutesPrep Time 30 minutesCook Time 0 peopleloved this print Ingredients Directions Ingredients 3 tablespoons Bertolli® Olive Oil Light Taste 1 - 1/4 pound boneless, skinless chicken thighs,, cut in half Salt and ground black pepper 1 small yellow onion,, chopped 2 stalks celery,, chopped 1 red bell pepper,, chopped 1 - 1/2 teaspoons fresh rosemary,, chopped 1/2 teaspoon crushed red pepper 2 cups Bertolli® Olive Oil & Garlic Sauce 2/3 cup chicken broth 12 ounces dried pappardelle pasta 1/4 cup chopped fresh parsley 1/2 cup freshly grated Parmigiano-Reggiano Directions Step 1: Heat oil in Dutch oven on medium-high heat until shimmering. Season chicken with salt and pepper; add to pot in single layer. Cook 5 min. or until golden brown on both sides, turning occasionally. Add vegetables. Cook 3 min. or until onions are translucent, scraping any browned bits from bottom of pot. Stir in rosemary and red pepper; cook 1 min. Step 2: Stir in sauce and broth; bring to boil. Simmer on medium heat 20 min. or until liquid is reduced by half and chicken is done. Shred chicken with 2 forks. Season to taste with additional salt and pepper. Step 3: Meanwhile, cook pasta as directed on package. Drain, reserving 1 cup pasta water. Add pasta to sauce mixture; mix gently. Adjust consistency of sauce with pasta water, if necessary.
