This is the perfect protein-and-veggie-packed “fridge-cleanout” recipe that has a short prep time and tons of flexibility to use what you have on hand. 5 Servings 20 minutesPrep Time 40 minutesCook Time 0 peopleloved this print Ingredients Directions Ingredients 1 teaspoon Bertolli® Olive Oil Light Taste 5 bone-in skin-on chicken thighs (about 2 pounds) 1-1/2 teaspoons each kosher salt and ground black pepper 3 large cloves garlic,, smashed 1 jar (24 ounces) Bertolli® Organic Marinara Sauce 1/2 cup water 1 cup uncooked quinoa 4 cups assorted fresh vegetables,, cut into 2-inch pieces (red onions, carrots, mini bell peppers, zucchini, mushrooms, cauliflower, canned artichokes or whole cherry tomatoes) Fresh basil, Italian parsley or chives Directions Step 1: Heat oven to 425°F. Heat oil in large oven-proof skillet on medium-high heat. Pat chicken dry with paper towels to remove any excess moisture before seasoning to create crispy skin. Season chicken with salt and pepper. Working in batches if needed, cook chicken skin-side down 6-8 min. or until deep golden brown. Remove chicken from skillet. Step 2: Add garlic, sauce, water and quinoa to same pan. Stir well. Simmer 4-5 min. on medium heat, gently scraping bottom of pan with wooden spoon. Remove pan from heat. Carefully return chicken to pan, skin-side up. Arrange vegetables in sauce mixture around chicken. Step 3: Bake 30-35 min. or until chicken is done (165°F). Sprinkle with herbs before serving.
