This recipe can easily be doubled for larger dinner parties. 4 Servings 20 minutesPrep Time 40 minutesCook Time 0 peopleloved this print Ingredients Directions Ingredients 1 large eggplant 1 medium zucchini 1 large red bell pepper 4 tablespoons Bertolli® Olive Oil Light Taste, , divided 12 ounces boneless skinless chicken breasts,, pounded thin 1 jar (24 ounces) Bertolli® Five Cheese Sauce with Ricotta, Romano & Parmesan Cheeses 8 slices smoked mozzarella cheese (about 4 ounces) 2 tablespoons thinly sliced fresh basil Directions Step 1: Preheat oven to 425°. Line baking sheet with foil. Trim ends off eggplant, zucchini and pepper. Cut eggplant into 8 (1/2-inch-thick) rounds. Cut zucchini in half crosswise, then cut each half into 4 slices lengthwise. Cut red pepper in half. Remove seeds and cut each half into 2 pieces. Arrange vegetables on prepared pan. Brush with 2 tablespoon oil; season with salt and ground black pepper. Bake 40 min. or until tender and golden brown, turning halfway. Step 2: Season chicken with salt and pepper. Heat remaining 2 tablespoons oil in large nonstick skillet on medium-high heat. Cook chicken 3 min. on each side or until done (165°F). Remove chicken from skillet; cover to keep warm. Add sauce to same skillet. Bring to simmer on medium heat. Simmer 2 min. Step 3: Spread 2 tablespoons sauce on each of 4 plates. Diagonally slice chicken into 8 thin slices. Place 1 eggplant slice on each plate. Top with 1 chicken slice, 1 cheese slice, 2 tablespoons sauce and 1 zucchini slice. Continue layering with 1 chicken slice, 1 cheese slice, 2 tablespoons sauce, 1 pepper piece and 1 eggplant slice.
