Ingredients

• 1 1/2 cups onions, chopped
• 1 tbls fresh garlic, finely chopped
• 1/4 tsp crushed red pepper flakes
• 3 cups arborio rice
• 9 1/2 cups fresh mushrooms, thinly sliced
• 1 1/2 cups dry white wine
• 6 cups chicken broth
• Fresh spinach, julienned
• 1 1/2 cups chicken broth
• 1/4 cup butter
