Bistro Beet Salad This beet salad can’t be beat. With crunchy leafed lettuce, soft steamed beets, chopped walnuts and Gorgonzola cheese, this bistro salad is booming with fresh flavor that’s easy to make, right at home. Complete your bistro-style salad with olive oil and poached eggs for the perfect finish. 4 Servings 10 minutesPrep Time 15 minutesCook Time 0 peopleloved this print Ingredients Directions Ingredients 2 large bunches red leaf lettuce,, well rinsed and spun dry 1 8-ounce package steamed beets,, sliced, or 1/2 pound cooked sliced beets from the supermarket salad bar 1/2 cup coarsely chopped toasted walnuts 1/2 cup crumbled Gorgonzola cheese (about half a 5-ounce container) 1 batch Garlic and Herb vinaigrette 2 teaspoons Bertolli® Pinot Grigio White Wine Vinegar 4 large eggs freshly ground black pepper (optional) Directions Step 1: Toss the lettuce with the beets, walnuts, Gorgonzola cheese, and half the garlic and herb vinaigrette. Divide between 4 dishes. Step 2: To poach the eggs, bring a 2-quart pot of water to a simmer and pour in the vinegar. Line a large plate or baking sheet with a paper towel. Step 3: Crack 1 egg into a heatproof ramekin. Use the handle of a spatula to stir the simmering water until it makes a whirlpool, then gently drop the egg into the center of the whirlpool. Step 4: Let the egg cook undisturbed for 30 seconds, then stir gently and cook for 2-3 minutes more, until the white is completely cooked and the yolk is beginning to firm up at the edges but still wobbly in the center. Step 5: Transfer the egg to the paper towel-lined plate and repeat with the remaining eggs. Step 6: Place a poached egg on each salad dish and top with freshly ground pepper, if desired.
