Bertolli® Olive Oil Light Taste, , divided 2 bagels Salt and pepper, to taste 1/2 tsp. paprika 1 lb. bulk chorizo sausage 1/2 medium onion,, chopped 2 1/2 cup Provolone cheese, shredded 1 cup Parmesan cheese, shredded 8 eggs 2 cups half-and-half or cream 1-1/2 tsp. ground mustard Bertolli® Olive Oil Spray Extra Light Taste Directions Step 1: Halve bagels, lightly drizzle with 2 tsp. of olive oil and sprinkle lightly with salt, pepper and paprika. Lightly toast the bagels. While bagels are toasting, heat 2 tsp. of olive oil in a large skillet, cook chorizo and onion over medium heat until cooked through; drain. Cut the toasted bagels into bite-sized cubes, and place at the bottom of baking dish lightly sprayed with Bertolli® Extra Light Tasting Olive Oil Spray. Sprinkle with the sausage mixture and top with the two cheeses. Step 2: In a large bowl, whisk the eggs, cream and mustard; pour over casserole. Cover and refrigerate overnight. Remove from the refrigerator 20-30 min. before baking. Bake, uncovered, at 350° for 40-45 min. or until a knife inserted near the center comes out clean. Let stand for 10 min. before serving.
