Ingredients

• 1 pound white or red potatoes,, cut into large chunks

• 1 small fennel bulb,, trimmed, thinly sliced
• 1/4 cup red wine vinegar
• 1 jar (7-1/4 ounces) roasted red peppers,, drained and thinly sliced
• 1 jar (24 ounce) Bertolli^® Parmesan & Romano with Cracked Black Pepper
